Recipe: Steamed Dark Leafy Greens with Figs, Pine Nuts and Garlic

We eat a lot of steamed and cooked dark leafy greens and are always looking for and coming up with new ways to dress them up with different flavors. I love figs and a little crunch adds texture – so this recipe works great. You can never have too much garlic, ever!

 Dark Leafy Greens with Figs, Pine Nuts and Garlic

Dark Leafy Greens with Figs, Pine Nuts and Garlic

2 bunches of your favorite greens (collards, Swiss chard, kale, bok choy, gai lan) destemmed and chopped
2 Tbsp coconut oil
3 cloves garlic, minced
1/3 cup cup coarsely chopped fresh or dried figs
1/4 pine nuts
Celtic sea salt and pepper

Steam the greens in a steamer or in a pan with a small amount of water. Drain well and set aside.

Heat oil in a pan to medium. Add garlic and cook for about a minute. Mmmmm, I love the smell of cooking garlic! Add the figs and pine nuts and cook until the nuts are lightly toasted. Stir continuously so they do not get burned on one side. Stir in the steamed greens and season with salt and pepper to taste.

Heat through or until all veggies are tender. Serves 4.
